I did this for a living many, many years ago.

Diced 300 pounds of potatoes for homefries in a morning way-back as a prep cook (at 16 years old), after the powered peeler took care of that part. Got real quick with it. An hour would do the whole 300#.

I prefer to just wash taters too. I can peel and dice a few pounds pretty quickly still.
I'd like some gadget that would just scrub potatoes etc. I did see a hint that those metal dish scrubbers like a Chore Girl were good and have tried one of those. Better than the brush I had flattened the bristles on. My mother used to say all the vitamins were in the peels. Could be depression era or WWII economics. Not much got wasted in our house.

Btw a quick way to "home fries" is scrub the dirt off a potato, stab with fork, nuke in microwave, while it is cooking heat skillet with a pat of butter. When it is done slice spud up and toss in skillet, salt and pepper. Add an egg or two in one corner and voila! Breakfast.

5 briskets about 6 lbs each, 2 12 lb pork shoulders, 2 racks of baby backs and 8 "country ribs" about 1 1/2 lbs each. I do NOT miss my stick smokers.

I guess I will pop a small ham inthe smoker inthe morning, and have smashed taters and corn and maybe make a chocolate cake,, I mean it is Easter,, right?

Just pulled 14lbs worth of chuck roast off the smoker. Doctored them up and finishing in the oven. Should be done around midnight.

Pulled beef sandwiches for lunch, with baked beans and a what ever else we decide on.

Thats what I love about the pellet smoker. If I want something a simple as a wood fired pizza, all I have to do is roll it outside and plug it in. I use it year round.

I'm bad about finishing my ribs in the oven, the longer I smell the smoke the hungrier I get! What wood do you smoke with and do you make your own sauce?
Just used A1 thick and hearty for the pulled beef.

I mixed in some apple wood chunks with natural lump charcoal this time around.

I need to get back over to Academy sports and get some more Mesquite firewood.

And yes, finishing in the oven is rough. 🤣😂🤣😂🤣😂🤣😂🤣😂

Usually hungry as hell after smelling them for 4 hrs 😂🤣😂😂😂🤣

I posted a recipe about a month ago for a maple and brown sugar BBQ sauce that I made up and used for some country ribs. Really good flavor with out all the heat.

Grill roasted beef tenderloin came out pretty darned good…this is just the large end of it sliced up.😎

My folks came over. Just them and the Mrs. and I.

My folks are really showing their age. “You burned it up,” “I think it’s raw,” “you’re knife is dull,” etc..

I’ve dozens of those for them over the years. One of their favorites.

Was a challenge feeding them today, but I know they had a good time and ate well. :cool:
