Hey RCW what else is in your yellow squash recipe? I have a sudden surplus of yellow crookneck.....
Just garlic, onion, salt, pepper and a little fresh oregano. Sautéed with a little EVOO.

Thank you! Guessed at the onion, but wasn't sure about the green flecks. I'll have to make do with dried oregano. I saw a recipe on one of the cooking channels last night that made a salad out of roasted squash slices using an oil and vinegar dressing with basil and mint. Problem is I fell asleep after the slices were put in the oven, so I'm not sure what happens next....sounded interesting though.

Last night was shrimp scampi, sautéed broccoli and garlic toast.

Also made a pumpkin cheesecake for the Mrs. birthday. We’ll have that today.... needed some chill time.

Cheesecake is about as close as I get to baking.

Looks delicious 🤤

Did you ever decide on a new pit?
I haven’t. I did look at that Pit Boss at Tractor Supply.

I’m honestly not that impressed with many/most I’ve looked at.

Whatever I do, it will be propane, because I think I’ve got an ethyl mercaptan addiction...arises mostly while cooking and drinking beer.😜🍺

If I do a smoker, it will be a different gig on its own.

Skeets - - breakfast sounds great! Good for you! 👍

As an aside - - I missed your brass polisher/spit-drive pictures until the other day. Great job posting pictures! 👍 :geek:

As far a a rub - - I wish I could help better. Others guys know better, and make me look like a rookie cook with their smokers.

I've gotten so I like a Cajun rub, but I don't smoke with it, and I buy it at the store. Since I'm in Upstate New York, the southern guys told me my "cajun" rub probably isn't much Cajun. They're probably right. Would like to try a REAL one sometime.

As you know, a loin will take any flavor great, from fruit to real spicy.

Not much fat, so just be careful not to dry it out.

Skeets, I'm partial to Bad Byron's Butt Rubb myself. But I can't handle anything thats really spicy.

I hit some country ribs last night with some butt rub. Just finished smoking them with some hickory fire wood.

Got them trayed, doctored, and ready for the oven for another 4 hours. 🤓🤓🤓 Gonna season some taters and throw them in the oven at 3 so dinner will be ready at 5:00. 😁😁😁

About to wrap the chuck roast for tonight.
Sorry skeets, I cheat too and use commercial rubs.

I was a pretty good breakfast cook many years ago.
Supper tonight was an omelette. Red onion, ham, mushrooms, garlic, provolone cheese.

A little hot sauce on top.

Somebody ate half of it before I could take a picture....

With all this COVID stuff, we’ve gotten so we plan menus in advance of the weekly run for provisions.

We have bunches of stuff in the freezers, but avoids quick trips to the grocery store for stuff that was ancillary to the menu...”do we have hot dog rolls?”

Looks like I’ll be eating pretty well over the weekend....

I was watching youtube and saw a little video about baking whole onions. I might give that a try leave the skins on and bake them like a tater. Serve with butter and salt, might be good

Skeets - they might be good next time you put something in the smoker too.
Never tried it but sounds good.
