Don’t have finished product, but yesterday was homemade chicken tenders with store-bought onion rings and Crispy Crowns (flattened tater tots).

Eaten in front of college basketball 🏀

Sunday supper is Italian Beef Steak with pasta. Might be bucatini or linguini fini.

Have some eye round left from last year’s beef. New batch came yesterday.

After browning well, the Beef steaks will stew for a couple hours in a homemade pan-made tomato sauce on the stove. Eye of Round is very lean and can be tough unless very rare or slow-cooked for a long while.

Timed myself. Took almost 2 minutes to prep the onions and garlic for the sauce.

40 years ago I could have done it in 45 seconds or less….that was 40 years ago, and I used a knife a lot more.

Like a chainsaw and other things…. I’m not as proficient as I used to be… I’m not going to further define “other things.” 🤓🤓

Onions, then garlic will go in the pan after the steaks are browned and removed.

Not something that either of us cooked but today was our 61st Elopement Anniversary so....

Last several years Easter dinner has been at our house with my parents and whatever of our kids that could make the trip home.

My folks got to where they couldn't host anymore. Just too much for my Mom to do.

In-laws are both passed. All siblings and cousins live far away

I’ve done whole beef tenderloin roasted on the grill for years. Started doing them at my folk's house long ago. Saved some work from my mom.

This year the Mrs. is on a trip and there’s none of our kids on the radar for getting here.

My parents have had some health issues lately.

I’m heading the hour to their place to fix them Easter Dinner on my Dad’s grill.

Probably just the three of us.

Ribeye steak, little red potatoes, mushrooms and broccoli.

Foil half-pans will limit cleanup. Add a little water to both the taters and broccoli. Mushrooms are cooked ahead. Just need to warm up. Do all of it on the grill.

Brisket is prepped for tomorrow. Fixing to throw it on the pit tonight after I get done with tonight’s dinner, nothing exciting just grilled chicken tonight

Did something this evening I haven't done since my wife was still alive. I fried chicken, I found her deep fryer down stairs, and just made up mashed taters and double dipped chicken breasts, and mixed veggies. Nothing fancy, but good comfort food on a rainy day.

I always get asked to bring these to any gathering. I don’t usually follow directions, so I don’t have an exact recipe to share, but general guidelines 🤣

Don’t think I need to cover egg prep 🤣 but the filling is the yolks, an appropriate amount of cream cheese for the number of yolks, a bit of Mayo, some spicy mustard, little hot sauce, Cajun seasoning, garlic, jalepenos and bacon. Then sprinkle with Cajun season and more bacon
