Looked up chicken riggies from utica and found several recipes. I'm thinking one could substitute venison strips for the chicken, and it would be tasty. I'm still boycotting commercially sourced chicken, more children hurt in a Los angeles factory.
I think venison would work fine.

Build yourself a chicken tractor and raise your own meat birds if you have the time and space. 8 weeks and some super tasty birds

I think today, its going to be Haluski, egg noodles and bacon for supper, and maybe a side of Pierogis, yep thats it !

Like I’ve said before our kids and family are gathering this weekend for our Christmas.

Guest of honor.

Since I cook them completely to medium rare on the grill, I don’t trim them a whole lot. Like some fat left on.

I sear them very hot at first, then back heat off until about rare, or 110 degrees or so. About 35 minutes or so.

Let rest.

If you were to buy a Filet Mignon in a restaurant, the “chain” along the side of the tenderloin would be removed.

For the sake of roasting on the grill, and the going price of tenderloin, I leave the chain on. This one had some meat in it.

I think I hit the cook temperature perfect…..😉

Damn - that makes my mouth water!
As much as I like to cook them, a tenderloin is not my favorite.

They are a favorite of my family, and that’s what’s important. 👍

Today was our Christmas celebration.

3 generations gathered across 2700 miles….

Best tenderloin I made today. 😉 Happy Holidays and Merry Christmas to All….😉

Yum! I bought a whole tenderloin yesterday, trying to decide how to cut it up and freeze in more manageable pieces. Sliced off a couple of pieces for dinner last night, and flavor was good. What was in your marinade? Might vacuum seal a hunk ready to thaw and sous vide for company.

Just olive oil, garlic, thyme, basil and pepper. Rosemary or whatever flavor you like are good options also.

Oh Muh Gosh, you do know how to get a "Foodies" attention. It looks delicious.

I'm a Prime Rib/Ribeye fan. I learned three decades ago, buying in bulk, breaking down into meals, then Vacuum Packing was the best option when feeding a family and two hungry kids...to also add myself to the "hungry" category. My wife, not so much, even though she loves my cooking. Go figure!!

I got away from the Seal-a-Meal type due to leakage. I stepped up to a Vac Chamber, and love it. So much better. Since using it the past couple years, I wish I'd bought one with more capacity. The one I have is limited to 11.5" wide bags, so... I'm having to cut things to smaller sizes, that I would rather package in the whole.
