Yeah - couple weeks ago I mentioned @Shawn T. W and the great stuff he was making in his truck.

I know people that can’t cook that well at home. 🥺

Those biscuits look pretty friggin good for a guy stranded in Atlanta…👍

I will admit that I kinda cheated on the biscuits ... I used Bisquick! :rolleyes:

But ... I noticed something on the back, a recipe that caught my eye . . .

Today I had a slow load, and I took a different way around Nashville, and stopped at our terminal in Lebanon to the East of there, and dropped my trailer, and bobtailed to the store ... Unfortunately my memory isn't the greatest, I forgot the Parmesan cheese, and BBQ sauce !

I took a guess at the cheddar cheese, and bought a pound of the sharp variety, turned out to be just 4 cups!

Mixing was kinda messy, but I got it done, my bowl was FULL! But it was the only bowl I had here in the truck ...

First batch was "clumpy" and I ended up with 2" balls ... Once pre-heated to 350°, I put them in for 10 minutes on bake, then turned it to air fry for 5 minutes ... Because the balls were so big, I couldn't add the second tray, but I had them ready to go once the first batch was done ... I only got 9 on the 10" X 10.5" trays.

These should have cooked another minute or two at most, center wasn't quite done ...

Second tray was the same size, but better mixed, as I had more room in the bowl to incorporate the ingredients better, I did total of 18 minutes but had forgotten that I had left it on air fry, so once I realized that at 15 minutes in, I switched to bake ... The bottoms are slightly more browned, not burnt, but crispy!

Third batch I was getting low on ingredients, and made the balls smaller, 10 minutes on bake, next 5 minutes on air fry, turned out good!

I ate the first tray, and this one from the last batch, quite tasty!

I have plenty of leftovers, (what's on the plate!) they are quite filling!

The cheese surprisingly is not very runny at all, the Bisquick absorbed most of it!

Like @TheOldHokie said - I’ve used Bisquick in the past too….nothing wrong with that.

I posted my buttermilk biscuit recipe here a while back. Starts with 66 cups of flour…

You’re making stuff in a truck cab….my hat’s off to you…

Bisquick good!
It's not like "scratch" my momma taught me, but it works ... I did throw in a handful of rolled oats yesterday though ...

I try to keep the "mess" making in the truck down, and the dirty "dishes" too ... I'll take them in with me in the morning when I get a shower, the room has a sink, toilet, and of course a shower ... Running hot water makes this possible for me ... Yeah, I have Lysol wipes, and Windex and paper towels in the truck, but nothing like dawn and hot water running in a sink!
