Duck eggs are some of my favorites. We had a bunch of ducks in my young days.
I've never had them before. Can you describe Duck eggs, compared to Chicken eggs, as fried or boiled?

they are pretty similar, duck eggs have a larger yolk compared to chicken eggs, little bit richer flavor.

we have a mixed flock with chickens, ducks, and guineas.

Guinea eggs are much like duck eggs as well in terms of a richer flavor, just smaller size.

Duck eggs have a higher fat content than chicken eggs. Thus, the "richer" flavor. That's why serious bakers also like to use them.

Yeah, the whites of duck eggs are a little different consistency too. A little firmer than chicken eggs.

About 2/3 of her customers get their fruit pies raw and frozen, then bake them at home. Saves us a lot of time and effort.

She puts all of them in 2 gallon zip lock bags with the crust covered with foil strips for baking, along with a small paper slip of baking instructions.

Gosh - - we get the Zip Lock Freezer bags in boxes of 100. They're now almost $0.60 each..

Of course, punkin and pecan get baked here. That amounts to 25 or so this year……😳

A frozen bunch going out.

She puts these in freezers at her work, and folks get them from there. They are all labeled for contents, baking instructions, owner, etc.

Got 10lbs of belly curing for bacon. Will hit the smoker around the 28th.

Italian style steak. Essentially steak in marinara with pasta. Parsley and oregano from the garden.

Will add some Cabernet Sauvignon so it’s not too red-wine heavy, like it could be with Merlot or Burgundy.

Our chopped garden tomatoes are frozen, but man this smells amazing already! 😋. Smells like “North End” of Boston.

Beef is Arm Roast (shoulder), trimmed, portioned and browned first.

Will need to stew a while. Recipes often bake it, but with 88 Thanksgiving pies in the works figured best to braise stove top to keep ovens open.

No sweat - I’m not even a good Methodist…. I promised to raise my kids Catholic. The Mrs. is Catholic.

Common in upstate New York, especially cities where railroads go through.

There’s often “Italian” and “Irish” Catholic Churches.
And Polish also!:)

Her baked pies heading out the door…..doesn’t show the other 15-20 in the kitchen….

Table is hickory….will take some strong fellas to get that out of the house…
