Rain/storms prevented it last week but we plan to go Monday and work next week, hopefully finishing Thursday.

They got hammered today with rain, think my friend said rain thru thursday or friday.

They are still getting hammered with no letup until Thursday PM and then there is a 40% chance of more rain Sunday. I have not gotten my lodging reservations yet because it may not dry out enough to get the sawmill to the logs and saw Monday. Water has nowhere to go down there. I would rather start on a Monday but I could postpone it a day or two. 40 logs so I should finish in 3 days but I always like to have wiggle room.

Time is getting close because the wife has her aortic heart valve replacement quickly coming up. Her pre-op is on the 13th and replacement on the 15th. I won't be going anywhere that week nor the week after.

14lbs of Chuck roast on the smoker Using a mix of hickory and mesquite firewood this time around. Had the chuck roast marinating the past couple days in worchestershire sauce, soy sauce, and A1.

I have a pork lion thawing out in the fridge, a rub and let it sit overnight then into the smoker for maybe 10 hours of so,, gona make a bunch of pulled pork samiches

Last Saturday we had "Corsican" wild boar stew, marinated for 24 hours in strong red wine, Armagnac and Madeira with raisins, cloves, onions, garlic, ginger, olive oil, oregano, bay laurel and pepper...

Looks Good - I did egg rolls and fried rice last night. You should try them with the air fryer - the color isn't as consistent but they come out a bit lighter. As with anything there is a learning curve. We have done them both ways and prefer them air fried.
