Homemade chicken and biscuits tonight on the pellet grill. Recipes pretty simple and calls for the use of red lobsters cheddar biscuit mix.

You shred a rotisserie chicken. Lay the meat in the bottom of a baking dish.

Cover the meat with peas and carrots.

Mix 2 cups of chicken broth, with a can of cream of chicken soup, add some garlic powder, onion powder, salt and pepper. Pour over the meat and veggies.

Mix up the cheddar biscuits minus the seasoning.

Spread the biscuit Mix across the top.

Bake for 50 minutes at 350°

Mix the seasoning package with 4 table spoons of melted butter, and spread across the top of the biscuits and bake for another 10 minutes.

I'm making it using regular butter milk biscuits.

Both my wife and I are getting over a stomach bug, and figured the recipe minus the cheddar biscuits would be easy on the belly 👍👍👍👍

Syracuse playing Oregon at 1pm today in basketball.

A little game day food of potato wedges, homemade chicken tenders, plus store bought crispy crowns and onion rings. That’s our supper in front of the television.

Just smoked up some wings for the afternoon.
In case you want to try

1 C canola oil
1 C lemon juice
4tsp crushed black pepper
4tsp kosher salt
6tsp red pepper flakes
16 cloves of garlic crushed
Hot sauce to taste (3 tablespoons for me)
5 lbs wings

marinate for 48 hrs turning 2x/day. Let your coals get hot, running around 600F for me. 5 min a side, internal temp on the wing of 160. Enjoy

We had our second annual homemade ravioli dinner a couple weeks ago, can’t remember if I posted this last year or not, apologies if I did.
Our friend John, full blooded Italian with a history in the catering business sets this up with his family’s recipe. Using his process we made around 800 ravioli that day. The local high school made the roller we use, should be able to see it in one of the pics. The short version of the process goes like this.
Dough, meat, dough rolled out evenly. Then the special roller comes in and makes perfectly square ravioli, we then take a pizza cutter and cut them out individually, poke holes with a fork, box them up and that’s it. John has the dough and meat prepared prior too starting the process.
Boil them 10 minutes in beef bouillon/ water, the graded parmesan, chopped fresh parsley and pepper on top. Must of had me about 30 through out the process. Absolutely delicious!

I decided to make scotch eggs as a snack for everyone while we were making the ravioli. Having never made them I was a bit nervous but they turned out great. Truth be told I made an odd number and cook one up the night before just to make sure I didn’t embarrass myself. Only half of the folks knew what they were so for those unfamiliar here’s how I made them.
boiled egg, wrapped in mild Italian sausage, washed in mustard and breaded with sage and onion stuffing I ran through the food processor. They’re supposed to be fried but I used the air fryer instead. They turned out to be a hit as I have a standing order to bring them to every get together in the future.

Thanks, been fixing one for several years on Christmas Eve for the family. About had a heart attach first year wife brought one home, didn't want to screw up an expensive cut of meat. Started smoking them 4 years ago and everyone seems to enjoy the flavor.

I hear ya… I’ve done 1,000’s of prime ribs, tenderloins, top rounds, etc. over the years.

My commercial days were many years ago.

I still get pretty antsy at home throwing a rib in the oven or whole tenderloin on the grill.

Don’t want to screw them up…..they cost too much and there is no “Plan B”….😳

That’s also where a good thermometer is crucial.

We had our family get together a couple weeks ago.

Fried haddock, rice and sriracha/soy/garlic roasted Brussels sprouts.

Venison backstrap off my land , shrimp from the local grocery store , washed down with a Leinenkugel Northwoods Amber. Soon to be followed by apple pie with vanilla ice cream.
