I'm no Coonass and I don't live in Coonass country, but I do love some Cajun cookin'.
True Dat. Spent a lot of time in BR and Lake Charles. Love the people, the food and the area. I have family that lives in BR as well so at least once a year I'm there. I used to have to go to Houston quite a bit and on weekends we'd drive over to LA to enjoy. Man, I miss getting my fix once a month.

Recipe is on the first or second page 👍👍👍👍 And I'm glad you enjoyed it. One thing you can do with that recipe to change it up is experiment with the vinegar. I make it with apple cider vinegar or balsamic vinegar. All three ways are good, it just changes the flavor a little.

My grandmother had two boxes full of index cards with recipes on them. She would would find new recipes in the back of magazines. Try them and if she liked them she would cut out the recipe and tape it to the index card. She actually found that recipe in the back of better home and gardens if I remember correctly.

I remembered her making it, and after she passed, I spent about two hours searching through the two boxes of recipes till I found it. She had a unique indexing system 🤣😂🤣😂🤣😂

She had some fantastic recipes she collected over the years. One I keep meaning to make is her version of rice Krispy treats for the grand kids. She would mix peanut butter in with the marshmallow and Krispy mix. Then spread the mixture out in a pan. Then coat the mix with a melted mixture (half and half) butter scotch chips and chocolate chips. She totally ruined my brother and I from liking the more common recipe. 😂🤣😂🤣😂🤣🤣

Last night was Bruschetta grilled chicken with zoodles, zucchini fritters and good ole Italian bread. Some extra marinara on the side.
The chicken breasts were from Amish store 40# case we bought. They’re huge.

Our baby turned 21 this week. He’s an aspiring Medical Doctor, and studying for his MCAT’s

His identical twin sisters are almost 28.
He requested a pumpkin chocolate cheesecake for his birthday.
I don’t bake much, but I like doing cheesecakes.

Sheep - this one comes right out of Betty Crocker. You can see how well used the book and these pages are...😎

Honestly, BC has some of the best and most simpl cheesecake recipes I’ve seen over 35 years, IMHO.

I just added the little mini chocolate chips to the batter and also on top. Also mixed a few Oreos with the ginger snaps. I also added an extra egg, just in case.....

I have used chocolate ganache for other cheesecakes...took a shortcut with the chips, and they were just fine.

We have an oven that can do convention. My scribble at the bottom says 275 convection for 90 minutes. I think I ended up at 260 until done.
As I said, I don’t bake much...I don’t like to measure anything. I still kinda wing it a little...😜

Thank you! Now to get the ingredients. I spend a lot of time cooking things with substitutions, but this one I am short of some key ones. My first cookbook was a looseleaf Betty Crocker. Falling apart.
