I'm not a fan of Guinness. But do use it on occasion for cooking with. The stronger flavor works good for recipes that call for beer.

It turned out pretty OK, darker than I thought and it has kind of a nutty sweetness, not something I would make a steady diet out of but not to bad

Did a few things for Easter dinner. Potato’s

au gratin, rack of lamb and some ribeyes. Finish it up with cheese cake and some blueberry compote’ with whipped cream

Nothing too fancy. Absolutely poured today. So I started the smoker this morning. Put a chuck roast on there and smoked it for 4 hours. Dosed it up with some seasoning, and it's currently finishing off in the oven. Between the wind and the rain it was hard to maintain the temperature today.

Got some seasoned potatoes, and a veggie to go with it.

I pickled some eggs last night. Vinegar soy sauce salt and liquid smoke in one jar. I tried pickling another jar in sauerkraut juice. We'll see how it turns out.

I was feeling a bit rambunctious this morning, so I made a blue berry Dutch baby.. have no idea where the name came from, but man I ate the whole thing at one sitting,, one of those deals your good for all day,,, now what to make for supper,, maybe spaghetti, with shroms and peppers and some bacon and pork and ground meat,, yeah that sounds good

Not yet. Guessing we’re still a few weeks out.

Strips, shrimp BBQ and scampi, plus some broiled scallops.
Had some fresh basil in the fridge, so threw that on the scampi stuff.
Add some pasta, roasted Brussels sprouts, salad, etc.
Oh, carrot cake.....

Re: asparagus, I had 3 about 4 inches tall last week, and then they disappeared??? Not sure if there was something else munching on them. :eek:
Or if the bitter cold we then had scared them back under ground. Looking forward to their reappearance.....

Smoked some pork belly for BBQ burnt ends.

Made up rub, applied and let sit for couple hours, cooked low heat for bout 4 hours with lump coals added some hickory chunks cut from one of my trees and smoked for another hour.

Temp at 160f, brought in cut in to chunks, added brown sugar, BBQ sauce and honey to make them sticky. Placed in pan and covered 2 more hours on grill.

Not bad but would not want often as a meal more to me like a appetizer, sweet and sticky.
