Yum! Busy freezing veggies from garden here. Anyone know any good eggplant recipes that will freeze?

Made a batch of ratatouille but didn't have enough tomatoes ripe yet and used some canned. Not as good.

And it was. A Grandson caught the over 50 lb. Catfish on a trot line and a daughter sent us the peaches. At noon today we had no idea what we would have for Supper.

Saturday dinner fireside was Asian chicken lettuce wraps with bbq ribs.

First time with Asian noodles, hoisin sauce and rice wine vinegar.

This was the Mrs. plate.

I had my chicken and veggies just over the Asian noodles. Very good.

I posted this in the daily chuckle as well. I was really torn on where to.post this and decided both places would rate it.

Deep fried diced crook neck squash, mashed pot/gravy, butter beans/squash relish, hamburger steak.

Not a good picture, but fried haddock with pasta primavera.

Both were very good.

Had some mixed veggies (cauliflower, broccoli, carrots) that needed to be used up.

So, tonight I decided to make up some sweet and sour chicken. Browned some cut up chicken tenderloins, then added onion, the mixed veggies, some pineapple and mango chunks.

Mixed up some sweet and sour sauce and added it to the pot.

I had to look up Vindaloo....Indian Curry.

Very little experience with Indian cuisine but bet a "smell-a-vision" would be wonderful!

We had "Indian" night this week so I made Vindaloo and bought a bunch of papadams to fry in oil. I add some arbol chili peppers and cayenne to the Vindaloo and make it about as hot as I can stand, but I'm a lightweight.

St. Louis Style Ribs for the weekend. Enjoy!!

Turned out very tender and had great color. Very happy with the smoke flavor my Rec Tec 590 gives the ribs.

Seasoned 1 hour prior to smoking.
Smoked @ 225° for 4 hours (B&B Hickory Pellets)
Wrapped @ 225° for 2 hours (Brown Sugar, Butter, Honey)
Rasberry-Peach BBQ Glaze applied and finished @ 250° till glaze is set up (50 minutes for me).
