Chicken & sweet potato’s for dinner tonight …

First time in my new toaster oven air fryer in my semi-truck!

I got 1.75 Lbs of boneless skinless chicken thighs for $2.98 Lb on sale today, the Kinder's Gold Label was on sale for the same price as the regular stuff, so I decided to give it a try, I liked the idea of the squirt bottle … I cut them up into strips/chunks, put half of them in a bag and tucked them into the fridge for tomorrow …

Then coated the others in extra virgin olive oil, sprinkled salt, pepper, garlic powder, oregano on them, then tossed them in a bag with just plain flour …

I air fried them for 22 minutes, but the 1st 5 minutes was in pre-heat mode, as it was heating up to 450° …

While they were cooking I sliced up a sweet potato, covered in olive oil, a little salt & pepper and a dash of oregano, I put them in for 15 minutes after the chicken was done, and while I ate the 1st course of chicken …

The chicken was great, moist and tasty, the BBQ sauce also made it even more flavorful, but I'll probably skip the flour tomorrow, and will double stack the chicken above the sweet potatoes, as I have two racks, and then the chicken fat can drip down on the sweet potatoes … !

I couldn’t do that…..

Have a lot of respect for drivers like Shawn, and what they have to do for their jobs on a daily basis.

great on the road cooking!!! had a travel job for about 3 years, driving cross-country and then two weeks at the site.. lots of road, lots of motels.. carried a little weber smokey-joe to make some evenings better!!! on one trip we got caught by an ice storm in Alabama,, had rooms reserved and got in just ahead of the ice.. dropped the big trailer and hit the stores,, bought more than enough food for 3 days as we knew everything would be shut down,, should have bought alot more as we could have sold grilled steak dinners in the motel parking lot!!! big ole pot of beef stew simmering away this morning..

I decided to marinate the chicken this afternoon while waiting for a load tomorrow ...

Before turning on the "oven" I tried to see how stacking the basket's would work, it won't ... The extra "ridges" in the sides are more to help hold the tray/basket in place so when sliding out, it doesn't tip, and the basket won't stay on top of it, so it will only hold 2 trays like advertised! so I did 2 "courses" again tonight ... The BBQ sauce browned up, and dropped, glad I had a pan underneath in the 2nd slot, as the "drip pan" is under the burner, and I'd rather not clean BBQ sauce off that!

Fortunately the "pan" has a ceramic non-stick coating so it's not too hard to clean, but the "basket" takes a bit of scrubbing!

Overall a much better dinner than I'd get here at the One9 truck stop I'm at with an Arby's ...

I don't plan on using it a lot for cooking meals, mostly bought to bake bread in ... But I had time yesterday and the short 1/3 mile walk to the grocery store was needed anyways as I needed more fruit and milk ... since my bread maker died 2 weeks after the warranty ran out, plastic gears that mix/knead the dough gave out ... While more work on my part, I can do that manually myself ... So this is working out, just need more planing on timing my stops to do it.

having done a lot of motorcycle camping and cooking,, (gear split between 2 BMW bikes) I came up with a camping kitchen box that would fit in a saddle-bag, I took a marine battery box, threw the top away, cut a new top from a plastic type cutting board (rabbited the edge to fit the box) all the camping cook-gear fit inside (stove, pans, utensils and some supplies) works well, gives me a cutting board and the empty box works as a portable sink..

On my way home this morning I stopped at the grocery store and picked up some hamburger, I like a good burger on the grill! While I have a electric George Foreman grill in the truck, I don't like how it does burgers ...

The 91/9 sirloin burger was cheaper on sale then the 81/19 I usually get, as I prefer more fat ... Got 2 .05 Lbs, and made 6 seasoned patties ... 2 for lunch, will reheat the others in the truck ...

This trick could save you some painful cleanup, which I'm sure is not fun on the road. I found sheets of parchment paper that fit our air fryer basket exactly. Cleanup now consists of wadding it up and throwing it away.


You would think it would impact the air flow when air frying, but things still cook just fine for us. (Other family members have also attested.)

I'm sure you have limited cubic feet for extra stuff like this, but might be worth the trade-off.

Oh, if your food doesn't sufficiently cover the parchment paper, it will get sucked up into the fan and burn. I put little stainless bars on each end, but you could probably cut the paper to size as well.

I have parchment paper already, use it in the grill to make clean up easier! :)

Good to know it doesn't effect air fryer cooking ...
