Cakes been hangin out a while. Everyone should be cooled down enough to make some icing. Chocolate buttercream this round.

Time to move on for dinner. This is a spin off of an italian caprese chicken dish we often do, but in sandwich form. Time to get some patties ready.

Last time I ground up chicken thighs and basically seasoned it like a meatball. It was good, but texture was too soft for my liking. I wanted some boneless thighs, but can rarely get that at our grocery. This round is going to be some pounded breasts.

Final product. Caprese chicken sandwiche on brioche accompanied with fresh beef steak tomatoes from my neighbors garden, fresh basil from our garden, a garlic pesto spread across both toasted buns, and some fresh mozzarella. Served with a side of fettucine alfredo.

The Mrs. is away this weekend.
Oh so you're bachelorin' it this weekend are you ole feller?

The ole lady and youngins will occasionally plan visits to her parents which are in fort payne, AL. I'll catch wind of this days prior and start having visions of me getting all kinds of things done. Yard work done, tractor work done, house work done. Nope!

The day they leave, I get home in complete confusion with no idea what to do.

Sitting there on the couch in silence with a completely scrambled thought process. Programmed only to serve others and function properly with many around me and relying on me, I find it the most difficult thing to even figure out what to do to even feed myself.

Always adds an unsettling feeling that I can never shake....but with that said, I hope you have an awesome weekend LOL.

Good Morning. Boy did I miscalculate the time. 13.5 hrs to finish. Pulled it around 1:30 this morning and let it rest till 9:30. Very pleased with the results. Off to the freezer and now to prep the smoker for the last shoulder.

So normally, I reverse sear when I have a flank or skirt. Just cause of the volume i'm dealing with. But i've been having regulator issues with both my grill and griddle (same cheap regulators) and have not bought new ones yet. So time to improvise with some good ole cast iron

We definitely lost a lot of taste but atleast we're gettin somethin done

Basted them and finished them off in the oven, then thin sliced....turned out decent.

No cooking for me for a few days. Just retired our old 36" Blackstone griddle and have upgraded to the new Blackstone 28"XL griddle and smoker. Should be fun. Started putting together today. This stupid thing has more parts than a NAPA store.

Spicy garlic wing marinade made and over 30lbs of wings. Off to the fridge to sit for 2 days. 5 bulbs of garlic in there
