The Blackstone is not put together, griddle is seasoned an today was smokin day. I bought a steelhead filet at Costco, made my rub and put it in the fridge yesterday to marinate over night. I'm using Applewood pellets. Smoked at 200* for around four hours and made sure the internal temp was above 145*. I really love Applewood for smoking fish as it is mild, and sweet smoke goes really good with fish. Anyway,
