Well I figured I'd share one thing that I love to do and what inspired my user name. Loaded up my big charcoal smoker while I was off work with the newest addition to our family. We give some to our elderly neighbors and our family will have me smoke stuff for them since ive got the space on the smoker.


BTW for anyone new to smoking or thinking about it, I like to fill up the smoker and vacuum seal the cooked meats. It heats up just like it came of the cooker! Great way to do some delicious meal prepping.

Anyways, threw on 9 racks of pork ribs, a brisket, beef ribs, and a pork butt for the BIL initially. 20 lbs of chicken were also added but I didn't get any pics of that on the smoker.

Time for the meat sweats! I didn't get a picture of the pile of ribs, but they turned out great and my kids loved it all.

Prime Rib is on sale at Publix right now at $5.79/lb. My wife bought this 8 lb PR last week and I made it earlier this week.

As taken out of the oven at115 degrees:

I ate both of them that first night. :) :)

I'll eat the last piece tonight; then the bones tomorrow.

Dang what a great price for prime rib! Looks delicious, nice work.

Christmas Eve is lasagna.

Christmas Day is fried haddock, shrimp and scallops with Mac and cheese, spinach and sautéed broccoli.

We had the wholecrew here for Christmas December 10, so a little variation from usual.

Weather is really crappy.

My folks are staying put at their house an hour away. Kids from Philly are hoping to make the trip.

Was betting on seafood at your house! I am always envious. I did buy a package of frozen mixed seacritters, mussels, squid, shrimp. It was pretty good. "Fresh" around here is pretty doubtful.

Well I gotta admit the crab and lobsters were frozen 😂

shrimp as well, but they did come from a customer that works down on the coast.

I have a 2lb tenderloin that I'm cooking up tomorrow night. Twice baked taters, and what ever veggie I pull out of the deep freeze.

Tonight was sweet and sour meatloaf, mashed taters and peas.

Had some apple tartlets that came with the loin and twice baked taters that I cooked up tonight for dessert.

Work gives us each a choice from Omaha steaks in lieu of a holiday party. So I chose the tenderloin to try this year. I hit the tenderloin with a dry rub tonight after I thawed it out. Gonna do it on the grill with natural lump charcoal with some mesquite thrown in for good measure 👍👍👍👍👍👍

Our meal this evening will be centered around Seafood, etc. Gumbo. We will start stirring and bubbling around noon so it will be ready when the gang gets here.

She bribed me with lunch at the Whole Hog Cafe in town 👍👍👍👍👍 Best BBQ locally. 😎😎😎😎

We get boneless skinless chicken breasts by the 40# case from a nearby Amish store.

Breasts are huge…..about 2# each.

Make great chicken tenders. Large chicken tenders…..

First step is slicing about 1/4”, then season with Lawry’s seasoned salt, pepper and a little hint of chili powder. After that, go into a pool of buttermilk overnight.

After the soak, nothing more than Italian bread crumbs, and shallow fry in olive oil, under medium high heat.
