Back in the 1950's, you had to leave a foot on a coon to distinguish it from a cat before you could sell it on the street. The "hot tamale" man wasn't so particular.

I have been out of town sawmilling for the past three days and we stayed at the Cabin on our property at night. When I got in last evening this was waiting for me:

Here ya go Skeets, I cut slab and nuke it for 30 sec all butter and coffee.

Irish Soda Bread


4-cups flour

1 tsp salt

2-tsp Baking powder

¼ -cup sugar

¼ lb un-salted butter

8 oz raisins

caraway seed



1: Mix, cut butter and add raisins & caraway seed to taste

2: Beat 1 egg with 1 1/4 cup buttermilk & 1tsp baking soda

3: Mix wet & dry together and shape into and round mound

Place in a greased pan, make a deep cross in the top and brush with milk

Bake at 375 f. for 50 min.

skeets and sheep - I will get the English Muffin recipe and post it.

Saturday was another try at homemade egg rolls and stir fry beef and broccoli.

Egg rolls were really good and looked better than first try.

Sounds challenging but I love English muffins. A staple at my house. Thank you!

Daughter wanted roast for Bday. Smoked for 45 minutes on the Traeger with Hickory flavor than braised in Dutch Oven for 6 hrs in the oven at 275 with 2 boulion cubes and two cups of water. Seems to be the favorite dish nowadays. Super moist and tender. Btw, this also works with potatos, carrots, and corn.

NCAA Basketball Tournament demands popcorn.

Keep your air poppers and microwave bags. I have the wire screen poppers for over a fire too.

The way to cook popcorn is a big kettle with hot oil, followed by good old butter and plain old oiodized salt....the kind with the umbrella girl on it .....hmmm that’s good....
