Tomorrow I'm gonna fire up the smoker and do some country ribs again. Both my wife and I have been craving some. Temperature is hot out, so I'll probably make up a fruit salad and a tossed salad to go with it.

We call this “mixed grill”, usually hots, hams, sausage and whatever else tickles my fancy. Some great sides; Mac salad, tossed salad, deviled eggs, and tater “Crispy Crowns” from the Air Fryer.....

Just pulled the country ribs off the smoker. Added some vinegar to the bottom of the pan for juice, dorctored with some sweet baby Ray's, tinfoiled, now in the oven till 4:30.

That seasoning bacon in the green beans is about like finding "pork" in pork and beans. It was a meatless meal. Pork tenderloin for tonight.

Yup pork tenderloin today and they generally come in pairs so the other got vacuum sealed. A little trick that I just learned is to use a rolled up square of paper towel as a blotter so that the juices are not sucked out by the vacuum. Yup, there is a tray but this is much neater.

Magicman, what works for me is to clamp my bag in then hold the vacuum sealer up with the bag down and vacuum and seal. The juices don't like to travel vertical as easy.

Magicman, what works for me is to clamp my bag in then hold the vacuum sealer up with the bag down and vacuum and seal. The juices don't like to travel vertical as easy.
I ran into that problem as well. I ended up upgrading to a chamber vac. You can actually vacuum liquid with it as well as vacuum canning jars.

The unit is expensive, but the bags are super cheap (comparatively). If you do a lot of it, the chamber unit will save money.

OK, I promised Pork Tenderloin so it was with Mashed Taters, more Green Beans and Cornbread. Our Cornbread is always made with yellow cornmeal.

This is actually a baked potato with the inside scooped out and filled with Fajita seasoned chicken( pre-cooked) and topped with sharp cheddar cheese and homemade bacon bits. I thought about making these a while back and gonna try them tonight for the first time. I take the insides of the potatoes and make potato salad.
