Man, you put a whole 'nother meaning to food truck!
Yeah - couple weeks ago I mentioned @Shawn T. W and the great stuff he was making in his truck.

I know people that can’t cook that well at home. 🥺

Those biscuits look pretty friggin good for a guy stranded in Atlanta…👍

I will admit that I kinda cheated on the biscuits ... I used Bisquick!

But ... I noticed something on the back, a recipe that caught my eye . . .

Today I had a slow load, and I took a different way around Nashville, and stopped at our terminal in Lebanon to the East of there, and dropped my trailer, and bobtailed to the store ... Unfortunately my memory isn't the greatest, I forgot the Parmesan cheese, and BBQ sauce !

I took a guess at the cheddar cheese, and bought a pound of the sharp variety, turned out to be just 4 cups!

Mixing was kinda messy, but I got it done, my bowl was FULL! But it was the only bowl I had here in the truck ...

First batch was "clumpy" and I ended up with 2" balls ... Once pre-heated to 350°, I put them in for 10 minutes on bake, then turned it to air fry for 5 minutes ... Because the balls were so big, I couldn't add the second tray, but I had them ready to go once the first batch was done ... I only got 9 on the 10" X 10.5" trays.

IMG_20251011_163907294.jpg

These should have cooked another minute or two at most, center wasn't quite done ...

Second tray was the same size, but better mixed, as I had more room in the bowl to incorporate the ingredients better, I did total of 18 minutes but had forgotten that I had left it on air fry, so once I realized that at 15 minutes in, I switched to bake ... The bottoms are slightly more browned, not burnt, but crispy!

Third batch I was getting low on ingredients, and made the balls smaller, 10 minutes on bake, next 5 minutes on air fry, turned out good!

IMG_20251011_171950548.jpg

I ate the first tray, and this one from the last batch, quite tasty!

IMG_20251011_172551007.jpg

I have plenty of leftovers, (what's on the plate!) they are quite filling!

The cheese surprisingly is not very runny at all, the Bisquick absorbed most of it!

Like @TheOldHokie said - I’ve used Bisquick in the past too….nothing wrong with that.

I posted my buttermilk biscuit recipe here a while back. Starts with 66 cups of flour…

You’re making stuff in a truck cab….my hat’s off to you…

Bisquick good!
It's not like "scratch" my momma taught me, but it works ... I did throw in a handful of rolled oats yesterday though ...

I try to keep the "mess" making in the truck down, and the dirty "dishes" too ... I'll take them in with me in the morning when I get a shower, the room has a sink, toilet, and of course a shower ... Running hot water makes this possible for me ... Yeah, I have Lysol wipes, and Windex and paper towels in the truck, but nothing like dawn and hot water running in a sink!

I use bisquick all the time, 2 tricks to help it work better.. buttermilk instead of water,, mix up the batter a half hour before cooking, don't mix after that, just scoop gentley.. (works for dumplings also) another cooking hint, McCormick's Italian seasoning mix (Marjoram, Tyme, Rosemary, Sage, Oregano and Basil) the one mix that has what you need..

While I have many others in my kitchen at home, I can only bring so much stuff here in my little blue house ...

Bowl is less than 9" inside ... Here it is with bread dough this morning ...

Turned into this by afternoon!

It really hard for me to resist fresh baked bread ... I only ate half the loaf ...!

N.Y,
My wife tossed all the bisquick after I started grinding fresh whole grains. 2 of those giant boxes from Costco went in the garbage right after the date expired on them because she stopped using them. Same with quaker oats once I started rolling my own.

My bread machine was great for making bread, until the gears stripped out, I could dump the ingredients in, plug it in beside my driver's seat, and 3 hours before I planned to park for lunch, I push the start button ... It would maintain the right temperature inside for the dough to rise evenly ... Now it's 2.5 - 4 hours before it goes in the oven ...

I also do all the mixing, and kneading in the bowl, much easier to knead on the counter at home ... But, I'm a bread head and love my fresh bread, I only bake it a few times a week ... But with the toaster oven I can also cook other things in it too ... Hope it lasts more than two weeks longer then the warranty, like the bread machine!

Dinner tonight, cooked up some rice in my rice cooker, added a egg and seasoning, plus some extra virgin olive oil, after the rice was cooked ...

IMG_20251012_180724708.jpg

The residual heat from the rice cooks the egg, I mix it all in while the yoke is still runny, gives the egg more contact with hot rice, and turns the rice a nice light yellow color ... I then added some ham I cubed up, and mustard ...

IMG_20251012_180946680.jpg

Mixed that all up ... Time for dinner! Yes, I eat out of the cooking bowl, one less to wash! 😂

N.Y,
Kraut time. Drove down to the Finger Lakes and picked up a half dozen heads of cabbage.

No pictures, but had BBQ shrimp, fried haddock, sautéed green beans and baked sweet potatoes for the Mrs. birthday dinner.

Followed by my pumpkin cheesecake for dessert.

Got to host our son, but his significant other wasn’t feeling well and stayed home.

We sent him home with a large care package for her. She’s a sweetheart.
