A good afternoon for a pot of Boiled Peanuts.

Memories. As a young and dumb yankee in South Carolina I bought a bag of peanuts at a local stand. Damn, they WERE RAW !! Never knew that they came that way.

Oh, there they are. Been crisping them up in air fryer lately like @Fordtech86 does. Should be good with my Redneck Chef & Son sauce…

Back at it again. I got another freezer pig showing up here in an hour so time to make room. 11.5lb belly in the cure. Trying another recipe. 2/3 cup kosher salt, 3/4 cup brown sugar and 6tbs of freshly ground black pepper. Off to the fridge for 7 days then to the smoker. That will be another post.

I would like to offer a word of caution. This morning cool damp and windy, a good morning for some comfort food,, well biscuits and gravy of course!
So this is a cautionary tail of being observant in the store.
I bought a pound of sausage just for this reason it was with all the other sausage and I made the assumption well you know. And to find this out morning ,only to find out AFTER I opened the package, and into the pan,,,,,,, it was ground turkey,,, yuck,, shivvvvver !!!
Long story short , ground turkey suck for biscuits and gravy !!!

The only thing worse is accidentally buying one of the gluten free baked goods that taste like the main ingredient is sawdust.
