Ours was Jambalaya last evening, well sorta anyway. Actually it ended up more like thick Gumbo. Good Stuff.

Magic - oh my, that looks SO good….

This Yankee has never had it, and likely wouldn’t trust any local concoction called Jambalaya.

Don’t even know the difference between jambalaya and gumbo.

Both are things I’ve always wanted to try….

I guess you could call it an antique. Opinel folding knife made in France. Still made.

I bought it 45 years ago as a teenager. I think it was $2 at Philadelphia Sales.

Used it in the first restaurant I worked in as a paring knife. Carried it in school (and usually had a gun in my vehicle).

Takes an edge real well. Very, very sharp. Used to run it through the dishwasher each day....

Buddy from high school worked with me and bought one also. Cancer took him 25 years ago.

Always think of Bill when I come across it……

I've seen the name get interchanged around here. I generally see a gumbo more of a stew type dish where, even though both dishes have rice, the jambalaya is more rice focused like a red beans and rice or beef tips over rice.

Either way, depending on the level of coon ass you're dealing with, you're liable to ingest any type of creatures. Opossum & coon being some of the worst I ever had.

I have 6 of them all different sizes. Bought them in the Zurich subway mall when I was on the way to the airport to head home from work. About 10 pounds of chocolate in my cary on for my wife . Put the knives in my coat pocket, then got on the plane to head home with just declaring them . Also had 6 Swiss army knives for friends in my other pocket. That was about a month before 9/11/01. Amazing what women will do for Swiss chocolate 🫠. These are my kitchen ones, the rest are in my shops. Just amazing how sharp you can get that steel.

I'll demolish a good carrot cake. And that one looks magnificent!

I've made a few. Usually come out dry. Ole lady loves them and as long as I grate the carrots SUPER fine, the kids do to.

Got a recipe from a customer that picks blueberries a few years ago. Has apple sauce in it. Seemed weird but was delicious and definitely wasn't dry. It started with me charging her a recipe for blueberry muffins LOL. Then got the carrot cake recipe. Seemed fair for 20 gallons of blueberries.

Also, your pizza recipe was an absolute success last night. I ended up doing 2 batches because my kids will ravage garlic knots, of which they did.

I'll get some pics posted tomorrow. For some unknown reason my phone doesn't link to my home computer like it does my shop computer. I can take a pic and in seconds its on my google photos thing on my work computer. I dont get it.

Getting everything ready sat morning to make some creme brulees for dessert.

Then on to some of @RCW 's pizza dough

It came out, i'd say, "rustic" lol. I didn't realize how easy actual pizza dough starts to shape unlike sourdough. And the taste was exactly what we'd been looking for. @RCW saved the day!

Kids of course wanted pepperoni, the ole lady wanted a margarita. And the garlic knots were spot on!

And then busted out the creme brulees for dessert

Yesterday kids wanted breakfast for dinner. Which I'm always down for. Some of the ole lady's biscuits and gravy, sausage patties, the cheap kroger hashbrowns, and eggs

Nothing special here except a griddle of mini biscuits.

Well maybe they were special because with a couple of eggs and some Peach Preserves, not many survived. Of course there are only two of us here and we are classified as "elderly".

Y'all get any of that downpour last night?

Bout 8pm last night the flood gates unleashed around here. Had a small river come down the driveway that ended up taking down almost a 15 foot section of wire fence.

It seems like all we get is gully washers these days.

Yup, and more than I anticipated. We are on a hill so no problem here, but I wonder about our Cabin property in Jefferson county. I hope no more trees across the roads & trails.

I had no clue Opinel had different sizes until I found them for sale online several years ago. Amazon still has them for $11. Not sure multiple sizes....

As a teenager, I got a couple for work, then my classmate/coworker did. I still have two, one with a small piece of the tip broken off....

Yes, they do take an edge very well. We used to keep them very, very sharp...

I dont think this has much to do with cooking, well maybe in a way it does. I had a Grand daughter and her hubby, visit and she said she would clean up the kitchen after breakfast, since I made it. Cool I went put stuff in the washer and and dryer, and hobbled back up stairs. The kitchen was spotless, I am impressed, they even went so far as to put stuff in the dish washer and get it started. Well we went and did our thing out and about, and came home, they said their goodbyes and left. Soooo I figured I might as well empty the dish washer. And what to my wondering eyes do I find? A freekin mess ! WTH? They put every bit of cast iron I had in the oven in the dish washer. Years of seasoning gone. So I called and asked her why they put all the iron in the dish washer,, She said it looked oily and dirty and didnt want me to get sick using dirty cook wear. So biting my lips I said thank you, and started to wash the rust off them one at a time and start all over. I am making a print out for the dish washer,, NO MO IRON IN THE DISH WASHER
