When I’m making tight turns on Bessy II, both with the FEL under load and just maneuvering around the property, my steering wheel ends up catty wompus.

With the front wheels pointing straight ahead, the large space between the steering wheel’s spokes sometimes lines up with the instrument cluster, sometimes they block it, as though I was in a turn.

It seems to change with each turn, yet the steering is responsive and the wheel is tight. Is this normal? Something I can fix?

I don’t want something slipping off in my hand or collapsing in the field.

What you have is normal. You have hydraulic fluid operating your steering, not mechanical linkage. You'll almost never have the steering wheel line up as you desire.

Yep like D2cat said, it's normal. ;)
Hydrostatic steering is like that. :D
