I have an rtv1100 that wants to throw you through the windshield when you let off the accelerator. Is there an adjustment for this?

Seems like I heard you can get a upgrade kit that will let it free wheel when you let off the throttle. Check with your dealer.
I have seen hydrostatic mowers (grasshoppers) that use something like a shock absorber on linkage to slow the return to neutral.

I did some more digging and found some info for the RTV 900 so this may not apply to the 1100. The reverse valve (dynamic braking) on top of the transmission can be replaced with part # K7611-14950 which is a new model valve with lower pressure setting which will reduse the amount of brake pressure the tranny applies. I don't know if this will help you or not.
