What, no vanilla ice cream? 😉
You have to eat your mistakes and this one may require some ice cream help.

The convection oven in the new American Range is cooking much faster than the old Garland. I am going to have to calibrate the thermostat because its REALLY fast. I thought I was safe with 45 minutes on the timer but I guess not....

Oh trust me - its not going to waste. Taste test says its fine - just a little more caremelization than I normally get. No ice cream needed but a cup of strong, hot, black coffee helped with all the sugar. I have no self control when it comes to cake or pie. This was still so warm a plate was needed for transport 😀

I really like the range -it was purchased as part of a kitchen reno that has now been postponed until after my surgery.

Dan - really like the range also!

That’s a big oven that I’m sure accommodates that very large roasting pan!

While our cooking appliances are labeled “Professional Series” they’re homeowner sized with some commercial features but can’t fit the commercial scale pans, etc. I miss that additional capacity often even though it’s just two of us now.

Are you saying that you found pie in the seat of your Kubota? Had the grandkids been playing around on the tractor recently? Did it look like pumpkin by chance? 🥴

American Range is well regarded in the commercial restaurant equipment world and they also make some very nice residential equipment.

This range replaced a 35 year old Garland that we purchased when we built the house. The old Garland was really a true commercial range retrofit with spark ignition instead of standing pilot lights. Garlands foray into residential equipment lasted no more than 2 years.

The new range is much more refined with real insulation and a convection oven with infared broiler, oven light, and window. Cooktop also has higher output burners and is easier to clean. I am still recalibrating 35 years of cooking times

That roasting pan was a 1991 house warming gift from my sister. Among other things it has been used to roast two turkeys for our Thanksgiving and Christmas dinners. It will hold two 25lb birds but this year we downsized to 2 x 15lb. Still makes a lot of very good gravy :rolleyes:

Should pie be eaten with a bowl and spoon, a plate and fork, or a napkin and your fingers?

Pie as a dessert should be served on a plate with a side of ice cream and eaten with a fork.

After the dishes are cleared to the sink for the wife to wash, fingers and napkin are appropriate for pie as a snack. Bowl and spoon are best if the snack includes more ice cream, but you run a greater risk of the wife catching you.

I was definitely familiar with Garland in commercial kitchens. Fed 100’s of 1,000’s of people with their equipment.

Known American line but didn’t see them as often. Certainly looks stout.

Many years ago I cooked about 36-30+ # turkeys for our Thanksgiving dinner at the restaurant I worked at.

Like you said, I could fit two turkeys in one of those roasting pans.

Did you drop the temp 25 degrees?
It's supposedly a standard when you us a old non convection recipe on a convection oven.
Our oven automatically adjusts when you hit the convection setting.

It's supposedly a standard when you us a old non convection recipe on a convection oven.
Our oven automatically adjusts when you hit the convection setting.
The pecan pie was 50 degrees lower. I think I need to find my oven thermometer

Etiquette? My wife, being adaptable, recognized she wouldn't break me of being a Neanderthal, so she's started making pies in cupcake sizes. Some adjustments required to keep the proper filling-to-crust ratios, but I'm still enjoying the mini pecan pies and mini pumpkin cheesecakes. Occasionally she'll even make mini-cupcake, bite-sized ones too. Good woman, good pies, can't figure out why I've put on this weight over the past few decades...

Several years ago we and 3 other couples would get together for 'pig outs' on every warm holiday. We definitely solved the 'how to eat pie' issue.
A couple of the wives made ribs you could die for. While warming them up on the grill the guys would stand around and with 1 fork and pass the pies around. Back then there was a pie bakery that made the most awesome strawberry pies. They were the first to go. Then the cherry, apple and blueberry met their fate.
All the wives would be pissed that there was almost nothing left. We called them pig outs for good reason.
