I roasted some Hatch Chile`s yesterday and made some sauce for enchilada`s. I was surprised at how hot it was after de-seeding and washing the inside out. This was my first time using them so I really did not know what to expect. They did have a good flavor on the enchiladas, I just had to use the sauce sparingly. I have some left over to try with other things. I think I am going to make some smoked Queso and add some to it. See below for recipe.

We like the green chile sauce on our breakfasts but as we grow older try to limit it to the milder Pueblo green chiles.... and we're certainly not into the competitive eating contests like yesterdays record set for open face burgers topped with Pueblo Green Chile - Note: Joey Chestnut was not the winner
