I had the LP 3rd function kit installed when I purchased my 2610 and I am finally getting around to picking up a grapple (which will be my first experience with one). When installing the grapple, do I just connect it, run the tractor, and then add hydraulic fluid if needed?

The small cylinder and hoses won't take much fluid to fill, you'll probably not notice the difference on the stick or in the window. But yes, just operate some then check the fluid.
If you use your new grapple like I do, you just purchased your new favorite implement.
Before adding the grapple to mine, the oil was about 2/3 in the sight glass. After connecting and cycling the lids 6 or 7 times, the glass was empty. I added about 1.5 quarts to bring the level up to the top of the glass.
Which grapple you have will probably make a difference. One cylinder, two, size of them and length of the lines will all make a difference. For reference, I have the EA dual lid. Just pick up a gallon for it. Whatever you have left over can be used when you change the filters.

Similar experience here with the BH77, after a few small uses, I had to top off the fluid.
OP, there's always some minor loss as well when hooking and unhooking implements especially if you wipe out the fittings like I do. It's no big deal. I grabbed a 5 gallon jug as it was cheaper than buying 1 gallon and most of it will get used when I do the 50 hour service (with added fluid change).

a small grapple with 1 small cyl and short lines of small diameter to front mounted 3rd function you would likely notice little to no change to fluid level.
now on the other hand if a larger grapple with 2 or more big bore cyl, 20' hydro lines lines running to say rear remotes, lines of big diameter say size that matches a backhoe than maybe a few litres will be needed.
best you use, check, repeat and all should be well. But like #2 says on a small machine like an LX hooking to existing 3rd function (likely front mounted quick connects but you didn't say) you likely need almost nothing added.

I switch implements all the time, and seldom loose any fluid, other than a Couple drops each time.
I guess if you add a new never filled implement, you may need to add a small amount of hydro fluid.

New equipment probably doesn't have any fluid in the system due to cost and the variety of fluids used out there. Install it. Cycle it fully a couple dozen times. Shut the tractor off and check the fluid level and add as necessary. Unless you have a big spill, you shouldn't have to add fluid every time you couple and de-couple. I only lose a few drops.
