Back in olden days when I was a teen, I did a lot of landscaping & mowing in Sun City & Youngtown, Az with an old retired guy. My only experience with bamboo removal required us to get rid of a clump about 3ft x 8ft x 10ft high. After chopping it down, We (me mostly) started digging out the stump/root ball.
By the time the old guy was satisfied it was eradicated, I was standing in a hole about 2 1/2ft deep x 4 1/2ft wide x 10 ft long. We (mostly me) backfilled with dirt hauled in from another job, and seeded with Bermuda. It never came back, as far as I know. So this supports Eric McCarthy's post above..... dig a big enough hole to eliminate the roots & it won't come back.

You're right about that, the only sure way is to remove the roots. I've tried roundup, tordon, and various other sprays. The only thing that stunted it back was Spike which is a granular herbicide and nothing else will grow there for a while after that application.

dig it all up, use a rock bucket to sift any roots that may be left in the soil. roots can be 2.5' deep. pile all of the roots and have a bonfire.... the roots must be destroyed or they will grow.... don't worry about the stalk, just let it dry and use them for plant stakes....
the best way to control bamboo, if you must have it, is to put it inside a metal wall with a plastic liner which is at least 3 ft deep.
