Disclaimer: there are people on this forum and in this thread that know WAY more about this topic than I do so if they disagree, listen to them.

Hesitant starting and rough idling on a diesel after a possible but not confirmed overheat, a compression check might be in order if you’re concerned about what long term damage may have been done.

And I think I understand what you’re saying about it running well enough to not hear an issue unless you have a pre-incident experience, so I’ll make you an offer in case you want others to listen to it. If you post a video of yours doing whatever it does that’s different from before (starting weird, slight rough idle, etc.), I’ll review the video and take a video of mine replicating whatever you’re doing with yours to the degree practical so the tech types on here can compare. Mine has a bit over 500 hours and runs like it always has. Not asking you to post a video for comparison. Obviously easier for me if you don’t. But if you want to do comparison videos, I’ll do it.

I made a short video of it on a cold start.
You can hear the slight hesitation in the starter, and then hear the excessive dieseling(knocking) start to clear up towards the end of the video.
Below is a link to the You Tube video.

Haven’t done this many times so hopefully I did it correctly. Sounded like you started at idle, so that’s what I did with mine. Idling or pulling hard, there’s no mistaking the engine is a diesel. I’ve never overheated mine and the way it sounds in the video is the way it has always sounded. Maybe that at least provides something to compare to.

Edit: Listening to both back to back, I’d agree yours doesn’t sound right. I’ll leave it to those with more expertise to weigh in on why. Sounds like it’s missing at least part of the time. 🤷‍♂️
