I was wondering what guys are doing for counter weight with the backhoe attachment off. I'm getting ready to upgrade from a L3010 to a L3560. I was going to have my tires filled but I've read multiple places don't fill them with a bachoe attachment. Is a 500 pound box blade enough counter weight with the larger La805 loader?

A 500lb box blade is not enough weight. Rule of thumb is somewhere around 70% of what your loaders lift capacity, which in your case is around 1600lbs. So you would be looking somewhere around 1100lbs. I like a dedicated ballast box that is compact, and you know you have enough weight to do whatever you need to do. There are alot of ideas on here to build one.

Filling the rear tires doesn't take any weight off of the front axle which is what you should be doing when using an FEL....it actually adds weight. A ballast box will counterbalance the load on the rear axle which is more than adequate to handle it. And Kubota does have a chart in their loader manual which suggests that the counterweight be around 50-55% of the loader capacity.
In my situation I have a LA304 loader with about 300# in the form of a ballast box filled with solid concrete blocks. The machine is very stable with that amount of weight.

Just to confirm what I said, on larger tractors it takes around 70% counter weight without loaded tires. On my B2650 I need at least 700lbs of ballast for my 1100lb rated loader to do max loader work and keep the tractor planted.
I usually use the bush hog or disk, I haven't found them to really be in the way yet.
Regarding filling tires with a backhoe, it says that in the manual, but my dealer filled mine anyway. Nobody really know why they say that. Many believe it's because it puts too much stress on everything if using the backhoe to move the tractor around. I believe it's because it lets you put more stress on the front axle with the loader before lifting the rear.
