I am thinking about adding a 3pt log splitter. Can I tap into the rear hydraulics (If so, how and where?) to power it or do I need to get a splitter with with it's own hydraulic pump driven by the PTO?

What tractor do you have? Go with separate pump the tractors pump volume is to low and your splitter will run very slow.

Babyfat: I was thinking that may be the case. I was trying to minimize the initial cost associated with the additional hydraulics.
