All the stuff you make looks great and so well-refined.
For anyone to make their own manicotti is admirable. Pasta and filling are both very simple; but to make a manicotti takes some effort.
As a youngster cook, I was taught by some Italian chefs -- -manicotti with sausage in the filling is one I NEVER saw, but bet it was damned good.....

We're having Meatloaf Saturday or Sunday. I'll likely double it so I can have some meatloaf sandwiches...

I would not be a happy vegan although theres a lot of really good Indian dishes
