Dan - - I somehow got back to this from New Year's Day.....

All the stuff you make looks great and so well-refined.

For anyone to make their own manicotti is admirable. Pasta and filling are both very simple; but to make a manicotti takes some effort.

As a youngster cook, I was taught by some Italian chefs -- -manicotti with sausage in the filling is one I NEVER saw, but bet it was damned good..... 😋

I always look forward to your food posts, keep them coming.....

We're having Meatloaf Saturday or Sunday. I'll likely double it so I can have some meatloaf sandwiches...

I hate screwing with those dried pasta tubes :devilish: I think "technically" the dish is called cannelloni when you use rolled sheets.

I would not be a happy vegan although theres a lot of really good Indian dishes

Heres another "unusual" take on a common dish. I got it from the cook at my golf club. His rendition is about three times this single serve size and its on the menu as Nachos Grande. A big heap of shredded lettuce, diced chorizo, onions, olives, tomatoes. and sliced jalalenos. Topped with a spicy queso snd served on a platter with a border of chips.

Thats an interesting question.

I had a hiatal hernia repair post transplant where they wrap the top of the stomach around the lower end of the esophagus to reinforce and close off the tear in the diaphragm. That can clamp down on the esophagus causeing a constriction and swallowing issues. Turns out yeast breads are some the worst foods because they can swell and become impacted. The stuff on that platter slides right down if well chewed. Now on the slide out things like chorizo and jalapenos can present a different problem. :ROFLMAO:

OK, what's dirty about it? I should've got off my duff and made a pot of ancho chili by now.
Browned ground beef, beans, canned beef broth, and a little tomato juice thrown together in a pot with seasonings. Takes about 15-20 minutes. In truth it tastes OK but I put a little lipstick on the pig.
