Arrgh....If you 'read between the lines' , it probably means 'by pressing the left and right buttons ,you can SET the MAXIMUM flow rate of oil going to/fro the AUX connectors ??

Kubota manuals are not known for their clarity. I am no b expert but I can watch instructional videos.
According to this video the hold button makes flow continuous. - hence "hold". Think mulcher operation.
On machines equipped with the high flow option there is another button that toggles between high flow and standard flow. That gives you two different maximum continuous flow rates.
And within high and stabdard glow you can also set the maximunm flow to a specific rate (GPM) for each of the individual outlets separately using the settings menu.
