My manual for the BX2380 says to run the mid PTO @ 2500 RPM.
My manual for the BX2830 (not a typo) FRONT 48" commercial blower says to run at maximum RPM in heavy snow.

What do you guys do...vary RPM depending on the DEPTH/TYPE of snow you're dealing with?

I've been running around 3000-3100 as there was a little mark on the tach for "PTO" and I never gave it much thought until now.

(I do engage it at lower RPM's of course) (1500-1700)

Pretty sure your manual doesn't say to run the mid PTO at 2500 engine RPM, but does say the mid PTO runs at 2500 RPM when your engine RPM is the PTO mark on your tachometer which equates to about 3200 engine RPM.

I only use the number of RPMs that are necessary to remove the snow on my BX23S, and not lug the engine RPM's down. On my BX22, I ran that at wide-open throttle, and never had a problem with the blower or the engine. Being that my new tractor has just turned125 hours, I will also use full power whenever the conditions warrant it. Light snows, I just blade them to the side, and heavy, deep, or wet snow, I use the snowblower. The one thing that I have learned about snowblowers, is the higher the rpm, the more damage you can do to the impeller and augers when the blower picks up something such as a rock or piece of wood. After the first time, I hit something and bent the auger and the fan, I learned to carefully check the driveway before the snow falls for any foreign objects that can and will stop the blower. Easier to check the driveway before the snowfall than it is to change shear pins and parts after you hit that object.

Need to see the consistency of the snow, then adjust accordingly. You adjust your forward speed according to depth and weight of snow as well. I go by “Feel” more than what a manual tells me

You know, you could be right. Maybe it's semantics or the way I am reading the manual.
"
The tractor has a 540 rpm rear PTO speed and a
2500 rpm mid PTO speed."

"

Mid PTO
USA No.5 (KUBOTA 10-tooth) involute spline
Revolution STD (2500 rpm)"

Yep, you got it. PTO RPM and engine RPM are different. Take a look at your manual for specifications. Not 30 minutes ago I went and looked at mine. Page 20.

Not sure which book you are referring to....owners manual for the BX2380?
I quoted the only 2 references to the mid pto speed in my (pdf) screenshot, above.

Thanks for your help-

Yes, the owner's manual for the 2380. It has a specifications table. Happens to be pages 19 and 20 for my 2380. May be different if your machine is newer or they've made changes to it.
