I have a M5640 kubota, that has a two quick connect hydraulic fittings on the back of the tractor. Could I connect the hydraulic lines from a front grapple to these?

Some may say no, but no reason why you cannot. I have seen various YouTube videos of just that. Folks made nice custom length and wrapped hoses to run from front to rear.

Absolutely. A friend down the road has been running a grapple like that on his 50hp tractor for years. He ran fixed lines from the rear remotes up to the loader and then rubber lines on disconnects.

My (used) tractor came that way. I haven't used it yet, but it's very nicely done. Just two more couplers to disconnect when dropping the loader.

I have a grapple on order and 3 rear remotes. I plan on using 2 for the top n tilt and the third for the grapple. It will be disconnect able in the rear for any other use I might have for it.

It might be slightly more awkward to use (is third function up on the joystick?). One right hand, two separate levers.

Ok, is the remote valve on the 5640 just, " open or closed?" ie, "on and off?" So, if I plug into the quick connect on my remote, how do I power "open" and "close" on the grapple? What kind of valve between the remote and grapple are others using? thanks.
