My owner’s manual states 6.7 US qts. with the filter change. I put that that quantity in after a complete drain and filter change and my dipstick reads well over full and it’s all clean oil on the dipstick. What’s up?

Did you start it and check again? Depending on if you were able to pre-fill the filter the level should go down after you run it long enough to establish oil pressure.
Yes I started it and let it run for 10 minutes and it is still about 1 inch above the full mark on the stick.
OEM filter?
I'm brand new on Kubota, but the manuals for many of my cars and motorcycles aren't too accurate with capacities. Hopefully somebody with that same tractor will chime in.
I'd suggest sucking the excess out and keeping it right on the "full" mark. Depending on the engine (again, not a Kubota guy) running with too much oil can be very bad.

Common question with oil/fluid changes. It won't take the stated capacity when I refill....
I think we either don't get all of it out, or the stated capacity is for dry (new) equipment. Either way, sometimes they take a whisker less than spec. My BX takes a little less oil and hydraulic fluid than spec on changes.
I would drain a little out. Don't run it overfull.
Like the others said, always a good idea to run it a little, then re-check and adjust. You did that, and have proven it's too full.

A bit overfilled or underfilled is of no consequence at all. On the overfilled end, so long as the oil isn't 'whipped' by the crankshaft lobes, all is good. It takes a gross overfill to do that.
I wold not be comfortable with an inch too high on the dipstick. If you don't have a "mighty vac" or similar to suck it out of the top I would crack the drain plug and try to drop a little.
