The grandson asked me Hey Pap when you gona smoke another pig,, well I smoked him a hog belly for bacon and he went tilt,, it really did turn out good. Well I stopped at the slaughterhouse they didnt have any ,so I stopped the the butcher shop,,, 6 bucks a pound :crying:,, krist I can buy good smoked bacon for that price and its heat and eat!!!! Anybody else find prices getting way out of line?

I haven't done pork belly. When I smoke pork, it's boston butt. Last I bought was $ .99 /pound. Have you tried making buckboard bacon (from the butt) or Canadian bacon?

I'm interested, too. Particularly as a Canadian! (The bacon we eat is the same as yours, thin strips of smoke/salt cured pork, often with an intolerably-high fat content, but is sizzles and smells fantastic when cooking and those crispy strips sure taste good!)

Skeets - what kind of smoker do you have? I don't have one... yet. As a young boy I watched my grandfather smoke his last pig in his homebrew smoker made from two 45-gallon drums. Haven't had good smoked pork since then, nearly a half century ago!

I have an electric smoker,, I like it because I set the temp and forget it I dont have to worry about temps going up or down loading pellets or wood and dont have to worry about the gas bottle going empty half way through.

Many many many moons ago down to the farm, it was smoking time and we kids were suppose to watch the fire, and add dry wood when it need it,. The fire was built in a hole lined with brick maybe 24x24x18 with 6 inch terracotta pipe line going up hill to the smoke shed. As you can assume that is not the most enjoyable time for a kid, and kids are so easily distracted. Somebody said I got my 22 lets go shoot dragonflies in the pond. SO we dumped an arm load of wood in and figured that should hold it for a while.
We were having a good time untill we saw smoke rising over the trees,,, you know one of those AWWWWW SHYT moments. Off we go, the fire pit is blazing the smoker shed is blazing the ground where the pipe was buried was smoking.
And the only thing that saved us was my bud grabbed an old bucket that he pulled out of the pond, we were going to shoot it. But the bucket had some water in it and I guess the grownups figured we were trying to put the fire out... 2 hogs paid the ultimate price for us shooting dragonflies ;)

I have a stick burner and a pellet smoker...



stick burner offers more tradition smoke flavor vs hardwood pellets..

Pellets are not as strong... (which pleases the wife)



set it and forget it IS VERY nice with the pellet smoker.... and it stays within 5°



I use the stick burner when I have time to sit and babysit it.... usually park it near the garage so's I can tinker around..... it's a 5-8 hour beer drankin activity... [emoji3]

JT I have some things using that in a gas grill. I dont think it would be to hard to make one,,, might be fun to try,,, as soon as I heal u some more

I ordered one of these almost a year and a half ago, should be finally getting it in Jan. then we will be doing some smoking.

Haven't gotten around to it myself. I usually look up a few YouTube videos. I don't think that the brine is different from pork belly bacon but I've been wrong before. It does seem to me that the bone in butt has a thicker fat cap.
