Some of the folks at work are getting stand up desks. They have a lift on them that allows the height to be adjusted an so that you can sit at them as well. There's a switch that's mounted to the bottom of the working surface with a cord that's zip tied to the bottom of the desk. That cord has an electrical coupler in it.

What I'd like to do is fab up an extension cord so that I can unplug the cord and run one desk from the switch in someone else's cube. If I do it, I'll probably just make a simple cord and leave the switch of the desk I'm controlling unhooked, but it would be funnier if both of the switches would control the desk. Is there a simple way of doing this?

Hard to answer that question without knowing how the desk is wired up. But, in order to control there desk, you would need to wire in a second switch. Probably be easier to run a set of wires to your cube for a switch and leave out the second power source.
