I have a L2850 with a LA650 loader. I want to check the hydraulic pressure is in-spec. My loader only has quick connects on 2 lines, I assume the source and return lines (not on every raise/lower/curl line like a modern loader).

Should I just pop one of the function lines and take the fitting to the Parker store and match the fitting to a hydraulic gauge and deadhead the function at full RPM to see the working pressure?

NO.... Well unless you want to blow the seals out of the pump.
You check pressure via the hydraulic block, the instructions are in the WSM.

Oh, I see. The loader doesn't have it's own relief valve? I can just check it via the procedure in the WSM?
If you can't find it just ask I have a L3450 which has the same hydraulic block.

One of the easiest was to test pressure is to remove one line going to a cylinder and put a tee on that with a gauge.
