I'm sitting here recovering from a really bad week of covid and the worst part is everything tastes like crap.Learned to do this 40+ years ago. Cuts down on dirty utensils

Making some pizza sauce. My wife’s grandmothers recipe from the Old Country.
Will be good with some oregano and parsley from the planter boxes.
Parsley bolted, so was good to top it

I haven’t traveled much, but have been to the “North End” of Boston for a family wedding. That’s the Italian area of the city.
If you are within 50 feet of my kitchen hood vent outside, it smells like the North End of Boston….

Awesome. I'm hoping to have a garden in place by next Spring. I'm betting 10 years from now, food security is going to be a big issue. We do about 200 pounds of tomatoes at a time for sauce. I remove the seeds because I don't like the bitterness they add.

At least 30% black tomatoes gives it flavor that's amazing. We also can whole tomatoes for lighter sauces.
I welded up a frame and mounted a gear motor on ours 35 years ago. Has done tons of tomatoes without a problem. We drove up to the Troy Bilt store to buy it. You can see the motor better in this Pic and that is an old sewing machine pulley. Great machin.Back in the day when the whole clan would help in canning season, Dad figured out how to put a small electric motor, a sewing machine motor I think a jack shaft and geared it down it had to run wide open to get the speed and torque he wanted,,, it made using that squeezo so much faster, and running the pulp through a second time was a breeze
