Maybe I’m getting used to the idea of retirement.

We typically work off leftovers during the week.

As the refrigerator was a little bit empty, I did some chicken wings on the grill and some sweet corn…..on a Wednesday…. :oops:

Olive Oiled pan, placed flour tortilla, scramble 3 eggs poured on top of tortilla. Salt, pepper and fresh cilantro added. Cooked 6 min tortilla down, flipped, cooked 3min egg down, flipped again, added goat cheese. Topped with a little bit of my favorite hot sauce! It's simple and good!

Learned to do this 40+ years ago. Cuts down on dirty utensils

Peppers and onions with some garlic for sausage sandwiches.

Making some pizza sauce. My wife’s grandmothers recipe from the Old Country.

Will be good with some oregano and parsley from the planter boxes.

Parsley bolted, so was good to top it

I haven’t traveled much, but have been to the “North End” of Boston for a family wedding. That’s the Italian area of the city.

If you are within 50 feet of my kitchen hood vent outside, it smells like the North End of Boston….

I'm sitting here recovering from a really bad week of covid and the worst part is everything tastes like crap.
We do about 200 pounds of tomatoes at a time for sauce. I remove the seeds because I don't like the bitterness they add.

Then it can take the 8 gallon pot 12 hours to simmer it down to 50%

At least 30% black tomatoes gives it flavor that's amazing. We also can whole tomatoes for lighter sauces.

Back in the day when the whole clan would help in canning season, Dad figured out how to put a small electric motor, a sewing machine motor I think a jack shaft and geared it down it had to run wide open to get the speed and torque he wanted,,, it made using that squeezo so much faster, and running the pulp through a second time was a breeze

Awesome. I'm hoping to have a garden in place by next Spring. I'm betting 10 years from now, food security is going to be a big issue. All the food recalls lately is just crazy, it's only going to get worse.

I welded up a frame and mounted a gear motor on ours 35 years ago. Has done tons of tomatoes without a problem. We drove up to the Troy Bilt store to buy it. You can see the motor better in this Pic and that is an old sewing machine pulley. Great machin.

You won't believe the flavors that you can get from heirlooms. Check out Baker Creek Seeds as they bring back some great heirlooms from hundreds of years ago worldwide. They can be frustrating because of lack of disease resistance. Local farmers markets are a good choice this time of the year.

Tamale Place on I20. My Son and his crew is working in Terry directional boring and placing a bunch of 12" pipe. I think new sewer pipe.

EDIT: Correction, it is new water mains. They are working out Midway Rd, etc.
