I have just a little electrical knowledge, but I want to mount a switch under the seat of my LX2610 that will optionally bypass the existing seat switch that tells the tractor there is someone sitting in the seat. So if the new switch is on the tractor thinks someone is sitting on the seat whether they are or not. If the new switch is off then everything behaves as normal and defers to the actual seat switch. I don’t think this should be difficult. Can any provide advice on how to do this?

You'll have to get the wiring diagram of your tractor !The seat switch may not be a simple SPST-NO type unit, could have an 'extra' switch function like a lot of newer 'riding mower' do. 'They've' also modified the connector that the seat switch connects to, with TWO internal switches, so you can't easily bypass the seat switch.

Pictures didn't copy but 2 wire switch, just wire your switch in parallel. Do this at your own risk. This information is for knowledge only and not to used to bypass any or all safety systems. In simple terms if you perform this and then get hurt/killed, DO NOT SUE ME or anyone else as you decided to bypass a system designed to help keep you safe.

1.2.4 Function of seat switch
This switch locates under the seat and detects the
operator's sitting on the seat or not.
This switch is a push type.
When the operator sits on the seat, this switch is turned
to on.
When the operator stand up from the seat, this switch
is turned to off.

That's easy. A simple on-off switch (NO, or Normally Open) run in parallel will do the trick.
