How do I check or adjust the Roll and Drag on my 2019 Kubota L2501 HST. It stops immediately when letting off the treadle pedal, it is not coasting at all. I confirmed the breaks are not dragging?

That is the way a HST works. You need to modulate your speed using the travel pedal. Slowly increase your speed by gradually stepping further on the pedal and to stop gradually decrease the pedal angle until you come to a stop.
By bring the pedal back to neutral position quickly you will stop abruptly.
It does tale some getting used to.

That's exactly the way it is supposed to work. Most folks worry about the fact that theirs doesn't do that and continues to roll. In any case, it's adjustable.
On the L2501 the HST is controlled directly by the pedal and linkage. The only way to adjust the control is by regulating the angle of the pedal.
On the newer/larger machines with electro servo operation you can adjust how aggressively the machine reacts to pedal input.

Why would you want your tractor to continue to move after releasing the pedal? The instant stop after releasing the pedal is one of the great features of the hydrostatic transmissions. It makes precise work easy.

I don't know how different my BX2380 (or TG1860) is from your B2501, but as described by Ruger1980 is how it works for me. I had no idea it's adjustable on a B........you should probably verify that.
I stopped greasing the directional pedals on both my tractors years ago. Now things slow down at a more reasonable rate, or if needed, I have the option to push the pedals slightly in the opposite direction to stop sooner if desired.
Granted a low tech solution, but it works for me...
Edit: originally my BX wanted to throw me out of the seat when I lifted my foot off the pedal...don't remember if I had that issue with the B2910.

I don’t know that it’s adjustable on the 01’s. It isn’t on mine but admittedly it’s not a 2501. As ruger1980 said, that’s how it’s supposed to work and it doesn’t take long to feather stops and starts without thinking. Pretty much the same as not snatching the clutch on a stick shift every time you shift gears. At first you think about it and it can be a bit rough. After a few hours you don’t think about it and it’s smooth as silk.
When my brother first bought his new JD (which is adjustable) he asked me how I had mine adjusted. Told him mine was non-adjustable and would snatch you all over if you let it but you get used to it and, if you do, it gives you better fine control. Suggested he leave it in the instant stop mode, put at least 100 hours on it, and then decide how he wanted it adjusted. He never adjusted it and thanked me after about 50 hours.
If you already have a bunch of hours in the seat and don’t like it, I’m aware that wasn’t helpful.
