Best way to cut overhang for new addition.

I'm building an addition and need to cut my overhang off to first, allow the new walls to slide in flush, and 2nd to allow for trusses to sit flush.

Best way to do that? Just cut 2 notches out for the walls first? Then cut the overhang off once i get the trusses up and partly sheathed?

I cut the original roof back then install the new trusses then resheet.
Make it much easier and quicker to set the new trusses and secure them properly.
