Just use any good grease to keep the joint lubed. Don't bother stripping and cleaning. Not necessary.

Never heard u-joint needle bearings referred to as high speed bearings. If you think about it, they hardly move much at all when the joint is spinning. Under load, yes, but spinning, not much. The fact that the u-joint is spinning fast does not mean the needle bearings are. No need to clean...

Actually the 300 gallon pull fan sprayer unit is driven by a drive shaft turning numerous belts to drive the twin piston pump, agitator and fan. Universal joints are good. The rattle definitely appears to come from the tractor.
